Pierre Celis left the De Kluis brewery in Belgium around the time it became financially involved with Artois. He moved to Austin TX, where he founded the Celis Brewery and continued to brew his familiar Belgian styles. He has since returned to Belgium, leaving Celis in the capable hands of his daughter and son-in-law, Christine Celis and Peter Camps. They tripled their capacity in 1996, thanks to their partnership with American Specialty and Craft Beer Company, a wholly-owned subsidiary of Miller Brewing Company.

Grand Cru
Style 2 - Belgian / French Ale
- 15 points - Beer #1-86, St.Mary's College Beer Festival, Moraga CA, June 13, 1993
Very pale. Smells a lot like the White, but not as strong. Spicy, but again not as assertive as the White. I'm not familiar with this style.
-
Pale Bock
Style 6 - American-style Pale Ale
- 17.5 points - Beer #12-845, Empire Tap Room, Palo Alto CA, April 4, 1995
Amber, big head, pretty flat. Very fresh aroma, great balance. Extremely Chewy! Great malty flavor! Could do with more carbonation. First pint off the keg!
-
Pale Bock (bottled)
Style 6 - American-style Pale Ale
- 15 points - Beer #10-698, Pacific Coast Brewing, Oakland CA, January 7, 1995
Amber, fine head. Flowery nose. Good body and balance. Nice floral hop flavor. Munich malt? Served too warm. Thanks to for bringing this bottle from Austin.
-
Pale Rider (bottled)
Style 6 - American-style Pale Ale
- 16 points - Beer #35-3319, Green Bay WI, at home, August 12, 1999
Golden, high carbonation, thick head. Lots of fruity hop aroma. Medium body, big hop flavor, but only mildly bitter, with a fresh malt balance.
-
Raspberry (bottled)
Style 2 - Belgian / French Ale
- 14 points - Beer #35-3305, Green Bay WI, at home, July 19, 1999
Bright pinkish-golden, fizzy, thick head. Big raspberry aroma, with some diacetyl. Medium body, sweet, tart, and fruity. Mildly sour buttery note in the middle.
-
White (bottled)
Style 2 - Belgian / French Ale
- 20 points - Beer #35-3306, Green Bay WI, at home, July 25, 1999
Translucent yellow, very fizzy, thick head. Sweet, peppery, fruity aroma. Medium-light body, big wheat flavor. Spices and citrus are there, but subtle, very well-balance with the rest of the beer. Creamy feel with a lot of carbonation.
- 15.5 points - Beer #33-2755, Siebel Institute, Chicago IL, April 28, 1998
Yellow opaque, thick head, some floating bits. Coriander aroma, some black pepper. Medium body, high carbonation, spicy, sweet. Thanks to Stephen Stehle for bringing this bottle from San Antonio!

White
Style 2 - Belgian / French Ale
- 19 points - Beer #8-534, Great American Beer Festival XIII, Denver CO, October 21, 1994

Pale hazy yellow. Extremely spicy. Thick, thick enough to carry the spice. Defines the style even better than Hoegaarden.
