Cantillon Gueuze 100% Lambic Bio Review

4.6/5

Traditional Belgian gueuze, 5% ABV. The reference point for the entire style, brewed the same way since 1900.

Cantillon is the brewery every other gueuze producer gets compared to, and its Gueuze 100% Lambic Bio is the reason why. It is a blend of one, two and three year old lambics, spontaneously fermented with the wild yeast that lives in the air above Brussels, bottled with zero sweetening and zero shortcuts. If you want to understand what lambic tasted like before anyone tried to make it more approachable, this is it.

The full review

It pours a hazy golden straw with fine, fast-rising bubbles and a thin white head that barely holds. The aroma announces itself immediately: sharp lemon and green apple, a deep barnyard and horse-blanket funk from the house Brettanomyces, plus a mineral, almost flinty note that comes from the brewery’s own building, which has not been deep-cleaned in over a century by design.

On the palate it is bone dry and intensely tart, with citrus pith, unripe apricot and a chalky, almost champagne-like acidity. There is very little malt sweetness to soften any of it. What sets Cantillon apart from younger gueuze producers is the depth underneath the sourness: a savoury, leathery complexity that keeps unfolding as the beer warms.

This is not an easy beer for a first-timer, but it rewards patience. Served slightly warmer than fridge temperature, in a tulip glass, it shows why beer writers keep coming back to Cantillon as the gold standard rather than just an old brewery with a good story.

The beer every other gueuze producer is measured against, and it still wins most of those comparisons.

Pros
  • The benchmark for the entire gueuze style
  • Extraordinary depth and complexity from wild fermentation
  • Ages beautifully for decades in the right conditions
  • Organic, additive-free brewing
Cons
  • Limited allocation, hard to find outside specialist shops
  • Intensely sour and funky, not a casual drinker’s beer
  • Pricier than most bottled beer

Who it is for

Serious sour beer and lambic fans who want to taste the style at its most traditional and least compromised. If you already like Lindemans Cuvee Rene or Petrus Aged Red and want to go deeper, this is the next step.

Cantillon Gueuze 100% Lambic Bio FAQs

What does Cantillon Gueuze taste like?

Sharply tart and bone dry, with lemon and green apple acidity, deep barnyard and horse-blanket funk from wild yeast, and a mineral, almost flinty edge that comes from the brewery’s environment.

How strong is Cantillon Gueuze?

5% ABV, moderate for a Belgian beer despite its intense flavour.

Is Cantillon Gueuze gluten free?

No, it is brewed with barley malt and unmalted wheat.

Is Cantillon Gueuze vegan?

Yes, it contains no animal products.

Why is Cantillon so hard to find?

It is brewed in small batches using traditional spontaneous fermentation, which limits output. Most bottles are allocated to specialist beer shops and bars rather than widely distributed.

How should I serve Cantillon Gueuze?

Slightly above fridge temperature in a tulip or wine glass, which lets the aroma open up more than an ice-cold pour would.

Where to find it

Cantillon is allocated rather than widely distributed. Specialist bottle shops, dedicated Belgian beer bars, and the brewery’s own Brussels taproom are the most reliable sources; expect to pay a premium outside Belgium.

The verdict

Cantillon Gueuze 100% Lambic Bio is as close as you can get to tasting the original version of a 900-year-old style made with almost no modern shortcuts. It is not for casual drinking, but for anyone serious about sour beer, it belongs at the top of the list. A benchmark four point six out of five.
