Ingredients

For the Mash – Liquor 16.25 Litres (28½ Pints) – Mash Time 1 hr – Temperature 65°c/149 °F

  • 6.10 oz Vienna malt Quantity 3kg
  • 5.12 oz Wheat malt Quantity 2.6kg
  • 1.2 oz Biscuit malt Quantity 500g
  • 10½ oz Crystal wheat Quantity 300g
  • oz Carafa special I Quantity 100g

For the Boil – 27 Litres (47½ Pints) – Boil Time 1 hr – 10 mins

  • 1⅓ oz (Hops) Magnum 11% When to add – At start of boil (IBU 44.1)
  • ¾ oz (Hops) Willamette 6.3% When to add – At turn off (IBU 0.0)
  • tsp  Protofloc  Other – When to add – For last 15 mins of boil

To Ferment – 18°C (64°F) – Conditioning 5 weeks at 12°C (54°F)

  • 1 Wyeast 2565 Kölsch

Instructions

Mash Preparation:

  • Heat 16.25 Litres (28½ Pints) of water to a temperature of 65°C (149°F).
  • In a mash tun or large pot, combine the following ingredients for the mash:
  • 3kg (6.10 oz) Vienna malt
  • 2.6kg (5.12 oz) Wheat malt
  • 500g (1.2 oz) Biscuit malt
  • 300g (10½ oz) Crystal wheat
  • 100g (3½ oz) Carafa special I
  • Stir the ingredients well and let them mash for 1 hour at the temperature of 65°C (149°F).

Boiling:

  • After the mash, transfer the liquid (wort) to a large boiling pot.
  • Add 27 Litres (47½ Pints) of water to the pot.
  • Bring the mixture to a boil and maintain a rolling boil for 1 hour and 10 minutes.
  • Add 1⅓ oz of Magnum hops at the start of the boil to provide bitterness (IBU 44.1).
  • When there are 10 minutes remaining in the boil, add 1 tsp of Protofloc to aid in clarity.

Cooling and Fermentation:

  • After the boil, cool down the wort as quickly as possible to around 18°C (64°F).
  • Transfer the cooled wort to a fermenter.
  • Pitch 1 packet of Wyeast 2565 Kölsch yeast or an appropriate amount of yeast starter into the fermenter.
  • Seal the fermenter with an airlock and allow the beer to ferment at a temperature of 18°C (64°F) for approximately 28 days.

Conditioning:

  • After fermentation, transfer the beer to bottles or kegs.
  • Condition the beer at a temperature of 12°C (54°F) for about 5 weeks to allow it to carbonate and develop flavors.
  • After the conditioning period, your Dark Wheat Beer will be ready to drink.
