For the Boil – 27 Litres (47 1/2 Pints) – Boil Time 1 hr – 15 mins
- 1 oz (Hops ) Northern Brewer 8% When to add – At start of boil (IBU 20.1)
- 1/2 oz (Hops ) Hallertauer Hersbrucker 3.5% When to add – At turn off (IBU 0.0)
- 1/2 oz (Hops ) Tettnang 4.5% When to add – At turn off (IBU 0.0)
- 1 tsp (Hops ) Protofloc Other – When to add – For last 15 mins of boil
To Ferment – 12°C (54°F) – Conditioning 4 weeks at 3°C (37°F)
- 1 White Labs WLP830 German Lager Yeast
- Heat 12 liters of water to 65°C (149°F).
- Add the Vienna malt, Munich malt, Melanoidin malt, and Chocolate malt.
- Mash the grains for 1 hour.
- Drain the wort into the boil kettle.
- Bring the wort to a boil.
- Add the Northern Brewer hops and boil for 1 hour.
- Add the Hallertauer Hersbrucker and Tettnang hops at turn off.
- Add Protofloc during the last 15 minutes of the boil.
- Cool the wort to 12°C (54°F) and transfer to a fermenter.
- Pitch the White Labs WLP830 German Lager Yeast into the fermenter.
- Ferment the beer at 12°C (54°F) for 5 weeks.
- After 5 weeks, transfer the beer to a secondary fermenter and condition for 4 weeks at 3°C (37°F).
- Prime the beer with sugar and bottle it.
- Store the bottles at room temperature for 2-3 weeks to carbonate.
